Baked Garlic Home Fries

I’ve posted about this a couple times on Instagram recently, so some of you may already know that making home fries is my current obsession… specifically garlic home fries. Some days I make them with sweet potatoes, some days with regular white potatoes, and some days with different seasonings. There are all sorts of variations to be crafted. Home fries make for a tasty, healthy side dish that you and your family won’t be able to resist!

The Seasonings Make These Garlic Home Fries

Garlic powder makes anything better, so naturally it made sense to add a hefty dose of garlic powder to this concoction. ALL THE GARLIC POWDER. Jk. You can, in fact, overdo garlic powder, but I’ve offered you the quantities for both a subtle garlic flavor and for “super garlic” home fries in the recipe below!

Beyond the garlic powder, I added some paprika to round out the flavor of these home fries and it also adds a beautiful color. But the MOST important ingredient in this recipe is the nutritional yeast! Nutritional yeast has TONS of health benefits, including a wide spectrum of B vitamins, minerals and it is in fact a complete protein (a huge perk for plant-based eaters). Beyond the health benefits, nutritional yeast is just straight up TASTY. It has a savory, “cheesy” taste (even though it is dairy-free) that pairs well with home fries and sooooo many other things.

Perfectly Sized Potato Slices For Perfect Fries

As they are piled high with tasty seasonings, make sure your potatoes are somewhat evenly cut so that you can get equal amounts of crispiness on each fry. My favorite way to do this is by slicing the large potato length wise, 3-4 times. Then lay each slice flat and cut your thin fry strips from there.

These baked home fries are perfectly crispy, super simple to make and packed with savory, garlic flavor.

Ingredients
  • 2 large potatoes thinly sliced
  • 2 Tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp nutritional yeast
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder (1 tsp for super garlic fries)
Instructions
  1. Preheat your oven to 425 degrees.

  2. Thinly slice your potatoes into similar-size sticks. Note: the more thinly you slice the potatoes the crispier they will get in the oven.

  3. In a bowl, combine the olive oil, salt, pepper, nutritional yeast, paprika and garlic powder.

  4. Add the potatoes to the bowl and toss until all potatoes are coated with the oil & spice mixture.

  5. Lay the seasoned potatoes on a greased or lined cookie sheet (I find that parchment paper works best) in a single layer. If you have some additional seasonings to do a light dusting on top, have at it – extra nutritional yeast is always a good idea!

  6. Bake for 30-40 min, until the potatoes are your desired crispness!
