Amidst this very weird season of life, I have found a few go-to things that bring me peace in overwhelming moments. They are my devotionals, walks with my dog, crossing things off my to-do list and making energy balls. Classic me. Yes, making energy balls brings me peace, so you can bet that I’ve made a lot of energy balls in the last few weeks 😉 These Chocolate Energy Balls with Collagen & Cranberries were birthed from a moment of overwhelm and the desire for some creativity in the kitchen!
Those who have read my blog for a while know my obsession with energy balls and I’ve tried to dissect why I find them so wonderful. For one, they can be made with all sorts of ingredients so the flavor combinations are endless! They are a really balanced snack of fats, carbs and protein and also make for a great breakfast on the go. And they are the ultimate fix for a sweet-tooth craving – this flavor in particular is a great way to get your chocolate fix!
I Love Chocolate, How ‘Bout You?
For the chocolate in these oatmeal energy balls, I used Ghiradelli 86% Dark Chocolate because I’m all about that dark chocolate life. Chocolate chips rarely come in this dark of a variety, so rather than using chips I simply crushed up a few squares of a dark chocolate bar!

One more note about the chocolate in this recipe… after heating up the peanut butter and honey in the microwave, and adding all the additional ingredients, the chocolate chunks start to melt a little in the most deliciously decadent way. Mmmmmm I’m smiling just thinking about it.

Get your chocolate fix with these oatmeal energy balls that are also boosted with collagen and cranberries. Healthy snacking has never tasted so good!
- 1/2 cup creamy peanut butter
- 2 Tbsp honey
- 1/4 tsp vanilla extract
- 1/4 cup collagen peptides
- 1/2 cup oats
- 3 Tbsp dark chocolate chunks/chips
- 3 Tbsp dried cranberries
Put the peanut butter and honey in a microwave-safe bowl and heat in the microwave for 20-30 seconds.
Add the collagen peptides and vanilla extract and mix.
Add all additional ingredients and mix until thoroughly combined.
Roll into golf-ball size energy balls.
ENJOY! (store in the refrigerator)
