When I was a little girl, my mom, brother and I used to make my great grandmother’s lemon cookies every holiday season. They were these perfect little lemon sandwich cookies that held a whipped lemon frosting between two puffy butter cookies. They were the BEST. Every year that we made them, we would laugh over the fact that great grandma’s hand-written recipe stated you should use enough lemon extract “to be lemoney.” Dear great grandma, but how much? haha. We would dump and pour until the cookies were really nice and “lemoney.” There was no shyness with the lemon extract. I tried to reign it in a bit, with these Lemon Cookie Energy Balls, but I can definitely say that pulling out the lemon extract brought me right back to childhood Christmases.
Speaking of lemon extract, I used another one of Rodelle’s delicious extracts to craft this recipe! So much lemon goodness. The bright flavor of these no-bake energy balls brings me back to Christmas traditions, but packaged in a healthy little ball! I don’t need to tell y’all how much I love energy balls. You likely already know 😉 But seriously, every time I craft a new energy ball recipe it reminds me how delicious they are. PLUS they are so perfect for a snack or breakfast on-the-go!
Let’s hop to it… Lemon Cookie Energy Balls here we come! Grab that food processor 🙂

- 1 cup cashews
- 1 cup pitted Medjool dates
- 1 tsp Rodelle Lemon Extract
- 1 tsp lemon zest
- 1/2 cup unsweetened shredded coconut
Grind the cashews into a nut flour in the food processor.
Add all additional ingredients (except the shredded coconut) and blend until a doughy ball forms.
Make golf-ball sized energy bites and roll them in the shredded coconut.
Store in the refrigerator!
