Overnight oats are a total game changer when it comes to fast-paced mornings and there are so many ways to play with different flavor variations! I’ve been excited to play with matcha powder in the kitchen recently and this was the perfect way to incorporate that smooth matcha taste into a breakfast recipe.
Even better than the amazing taste of matcha in this breakfast is the fact that it’s gluten-free! Did you know that oats are naturally gluten-free? Only some are labeled as such because they are processed in a gluten-free facility so there isn’t a stitch of gluten to be found in them, which is necessary for someone with celiac disease. If you are simply avoiding gluten for the sake of improved health, rather than out of necessity, save a couple dollars by buying the regular oats, because the amount of gluten found in them is so negligible. There’s your little fun fact and money-saving tip for the day 😉
Beyond being gluten-free, this recipe is also dairy-free! The Coconut Cloud Matcha Green Tea Latte Mix in this recipe is a coconut-based powder that is SO TASTY! It’s perfect for making a simple matcha latte or whipping up tasty recipes like this! I have my sights set on some matcha energy balls in the future as well 🙂 Classic case of me thinking anything will taste great in energy ball form… I have yet to be proven wrong.

I love making this recipe in a big mason jar and shaking it up to combine all the ingredients, then portioning it out into single-serving containers or smaller mason jars. If you want to amp up the protein in this recipe you can even add a scoop of vanilla protein powder!

Your matcha latte meets your morning bowl of oats in the most delicious gluten and dairy-free way!
- 1 cup oats
- 2 Tbsp chia seeds
- 2 Tbsp Coconut Cloud Matcha Green Tea Latte Mix
- 2 Tbsp unsweetened coconut flakes
- 2 Tbsp pumpkin seeds
- 1/4 tsp vanilla extract
- 1 Tbsp maple syrup
- 1 cup unsweetened almond milk
Combine all ingredients and mix thoroughly (or shake in a mason jar).
Leave in the refrigerator for at least 2 hours, then enjoy!
