Meal prepping sometimes feels like a daunting task, yet it is one of the most tried-and-true ways to start improving your nutrition habits! Preparation allows you to dodge temptation and avoid that feeling of getting home from a long day with a hunger that leaves you foraging through your fridge. You know that feeling when you start cooking dinner and pull out something to snack on and pretty soon you’ve eaten a dinners-worth of snacks before your dinner is even done? Yeah… we’ve all been there.
Focus on finding simple recipes that make meal prepping feel less daunting. Plus, it’s an exciting opportunity to improve your health and your cooking skills! Meal prepping doesn’t need to take hours and hours and it certainly doesn’t need to be complex.
Here are a couple of simple ideas to meal prep this week – your body is going to dig all these micronutrients!
Simple Roasted Veggies
Ingredients:
- Any vegetable of your choosing – my favorites are broccoli, peppers, carrots and sweet potatoes
- Olive or avocado oil
- Salt and pepper
Directions:
- Preheat your oven to 425 degrees.
- Chop your veggies and spread across a cookie sheet that is lined with aluminum foil.
- Drizzle with oil and season with salt & pepper.
- Roast ‘em up – time will vary depending on the vegetable and how crispy you like them – here are some general guidelines:
- Broccoli: 20-27 min
- Peppers: 20-27 min
- Carrots: 30-35 min
- Sweet potatoes: 35-40 min

The perfect savory side dish to add to your meal prepping menu!
- 1 lb asparagus
- 1 Tbsp avocado oil
- 1 Tbsp minced garlic
- 4 pieces turkey bacon
- Dash of salt & pepper
Warm up a skillet, over medium heat, with the oil and garlic.
Wash and chop asparagus spears into 2 inch pieces, then add to heated skillet and sauté (season with salt & pepper).
In a separate pan, cook the turkey bacon until crispy.
Once the turkey bacon is crispy, chop into small pieces and add to asparagus.
