This is a childhood dream come true… in the form of banana bread. Re-experience the delight of opening your lunch box to find a PB&J sandwich, and this time it’s the most perfectly grown-up version that’s good enough for breakfast! Did I mention that it is gluten and diary-free as well?!

PB&J Banana Bread… A Twist on a Classic
The base of this banana bread recipe is one that I have been making for quite some time now and naturally my experimental self thought it would be delightful to add a little twist. This is the season of ripe, fresh berries and you can’t ever go wrong with peanut butter, so what better way to celebrate the marriage of PB&J than in a loaf of banana bread.
The addition of the berries in this loaf made for the perfect moist texture, that seedy, sour crunch when you hit a berry, and they added a gorgeous pop of color. Plus, we can’t complain about the lovely addition of micronutrients from those little red gems!

This recipe will definitely be on repeat in my weekly meal prep, because this is such an easy breakfast option or a tasty pre-workout snack! If you have little kiddos I’m sure this will be a fan favorite as well… at least it was with my fur baby. And she’s gotten to try a lot of mommy’s recipes, so that is saying something 😉
