The Easiest Paleo Banana Bread You’ll Ever Make

Minnesota is currently in the heart of a blizzard… in the middle of April. And my poor car, Bianca, is absolutely terrible in this weather, so I’m basically trapped in my apartment all day. What better way to make the most of crummy weather than by baking some paleo banana bread?! Might I mention, the easiest banana bread I’ve ever made! Definitely had to pass this one along to you all!

The Secret Ingredient to This Paleo Banana Bread

I used the Birch Benders Paleo Pancake and Waffle Mix as the base for this banana bread, which was an idea that sparked in my mind as I stared into my cupboard wondering what I wanted to bake. This mix also makes incredibly delicious pancakes and I am the biggest fan of how clean the ingredients are. Other Ingredients You’ll Need

In addition to the paleo pancake mix, you’ll need a few ripe bananas and some coconut oil, for the base of the banana bread. Let’s chat coconut oil for a moment… there are two main kinds – refined and unrefined coconut oil. The refined coconut oil has a milder taste (great for those who don’t love coconut flavor), but is slightly more processed because it is refined after all. The other option is unrefined coconut oil which has a stronger coconut flavor (if you’re into that) and is slightly less processed. Both totally work in the recipe, it’s just a matter of how much coconut flavor you want coming through in the banana bread. In addition to your base ingredients of the bananas, pancake mix and coconut oil, you’ll need cinnamon and vanilla extract. My absolute FAVORITE vanilla is from Rodelle – check it out here! Fair Warning…

… you are going to want to store this banana bread somewhere out of sight. Otherwise you will run the serious risk of eating the whole loaf far too fast. It’s that silly delicious. 

Paleo Banana Bread

The EASIEST way to make a grain & dairy-free, paleo loaf of goodness!

Course: Snack
Ingredients
  • 3 mashed extra ripe bananas
  • 1/4 cup melted coconut oil
  • 1 1/2 cups Birch Benders Paleo Pancake Mix
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
Instructions
  1. Preheat your oven to 350 degrees.

  2. Mix the mashed bananas, coconut oil, cinnamon and vanilla extract in a bowl. 

  3. Add the paleo pancake mix and thoroughly combine into a thick batter.

  4. Pour and evenly spread the batter in a greased loaf pan.

  5. Bake for 35 minutes (check with a toothpick or knife to make sure it comes out clean).

  6. Let cool and enjoy!!
