This makes the most delicious side dish, or pair this pilaf with chicken breast for a protein, whole grain and veggie-packed meal!
Heat the oil in a skillet over medium heat and add the shallots, carrots, Brussels sprouts and garlic - cook for 5-7 minutes, until the shallots become translucent.
Add the rice to the skillet and stir until lightly toasted.
Add the turmeric, thyme and pepper.
Stir in the chicken broth and water, then bring to a boil.
Reduce heat, cover and simmer for 45-60 min.
Fluff with a fork and serve warm.
