Ingredients
  • 1 cup cashews
  • 1 cup pitted Medjool dates
  • 1 tsp Rodelle Lemon Extract
  • 1 tsp lemon zest
  • 1/2 cup unsweetened shredded coconut
Instructions
  1. Grind the cashews into a nut flour in the food processor.

  2. Add all additional ingredients (except the shredded coconut) and blend until a doughy ball forms.

  3. Make golf-ball sized energy bites and roll them in the shredded coconut.

  4. Store in the refrigerator!
