Ingredients
  • 3 ripe, mashed, medium bananas (~1 cup when mashed)
  • 1/3 cup honey
  • 1/2 cup unsweetened applesauce
  • 1/3 cup coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
Instructions
  1. Preheat your oven to 300 degrees.

  2. Combine all wet ingredients in a bowl, including the mashed bananas, honey, applesauce, coconut oil, eggs and vanilla extract.

  3. In a separate bowl combine all dry ingredients, including the oat flour, whole wheat flour, baking soda, cinnamon and salt.

  4. Pour the wet ingredients into the bowl of dry ingredients and fold the wet and dry ingredients together, making sure not to over mix.

  5. Spray a 4x8 inch loaf pan with nonstick spray and line with parchment paper.

  6. Pour your banana bread batter into the lined loaf pan.

  7. Bake for 60-70 minutes, until the edges are golden brown and a knife stuck into the middle comes out clean.

  8. Let cool and enjoy!
