These black bean brownies are so delicious and fudgy, yet packed with healthy ingredients! Enjoy this extra festive edition, made with refreshing peppermint and candy cane.

  • 1 can black beans, drained & rinsed
  • 3 eggs
  • 1/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp peppermint extract
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup crushed candy canes (~3 canes)
  1. Preheat your oven to 350 degrees.

  2. In a blender, add the black beans, eggs, coconut oil, coconut sugar, cocoa powder, baking powder, peppermint extract and salt, then thoroughly blend.

  3. Add the dark chocolate chips and pulse your blender a few times.

  4. Pour the batter into a lined 8x8 inch baking pan.

  5. Bake for 35 minutes.

  6. When your brownies come out of the oven, sprinkle the candy cane bits across the top.

  7. Let cool briefly and enjoy!
