Roasted Carrots with Dill and Feta

These roasted carrots are the perfect healthy side dish! They are simple to make, delicious and look so beautiful on the table.

  • 6 large carrots (cut into 3" slivers)
  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 1 tsp dill weed
  • 1/2 tsp salt
  • 1/4 cup feta cheese crumbles
  • Optional: Fresh dill for garnishing
  1. Preheat your oven to 425 degrees.

  2. Cut your carrots into 3" slivers.

  3. Lay the carrots out, single layer, on a parchment-lined baking sheet.

  4. In a small jar with a lid combine the olive oil, maple syrup, dill weed and salt.

  5. Shake your glaze up and pour it over the carrots, using a spatula or your hands to push the carrots around the pan so they all get covered in glaze.

  6. Bake for 25-30 min, until the edges of the carrots are starting to brown.

  7. Sprinkle the feta crumbles across the top of your roasted carrots.

  8. Optional: Garnish with some fresh dill.

  9. Enjoy!
